3 Homemade Fruit-Based Popsicles

It's hard work having to sit by the pool with the hot summer sun beating down on you. You deserve a refreshment! These homemade fruit-based popsicles will cool you right down. They can serve as your low-calorie dessert of choice all summer long or as the perfect, simple treat to offer to your dinner guests.

I included three popsicle recipes below—each with a different base. The first one consists only of fruit. The second one has a coconut milk base, making the popsicle both creamy and tropical. And the third one has a Greek yogurt base, giving it a hearty, creamsicle-like consistency.

Don't forget to get creative with these recipes! Change up your fruit combinations with whatever you have on hand and see what kind of flavors you can come up with!

Note: You will need some basic equipment to make these sweet treats. This popsicle mold set works as the perfect starter kit.


1. Fruity Citrus

(Yields: 8 popsicles | Prep Time: 10min | Freeze Time: 6hrs)

- ½ cup orange juice

- 1 ½ cups fresh fruit, sliced (I like assorted berries, kiwis, and peaches)

- 2 Tbsp. lemon juice

- 1 Tbsp. lemon zest

- 2 Tbsp. raw, local honey

2. Coconut Mango Lime

(Yields: 8 popsicles | Prep Time: 10min | Freeze Time: 6hrs)

- 1 can coconut milk (full-fat)

- ½ cup mango, skinned and cubed

- ¼ cup lime juice

- 2 Tbsp. lime zest

- 2 Tbsp. raw, local honey

3. Strawberries and Cream

(Yields: 8 popsicles | Prep Time: 10min | Freeze Time: 6hrs)

- 1 ½ cups fresh strawberries, sliced

- 2 Tbsp. raw, local honey

- 1 cup full-fat plain Greek yogurt (or dairy-free alternative)

- ½ tsp. vanilla extract

Instructions:

1. Mix your ingredients together in a large bowl. You have a few options of how to do so:

- For the well-blended look:
Puree all of the ingredients together in a blender or food processor and evenly pour the mixture into the molds.

- For the chunky look:
Stir together your ingredients. When pouring the mixture into the popsicle molds, check to make sure that you have equally distributed the fruit.

- For the layered look (this works best for the yogurt-based pops):
Blend your fruit and set aside. Stir together the remaining ingredients in a separate bowl. Pour a little pureed fruit into the mold and then a spoonful of the yogurt mixture. Continue back and forth until you have filled the mold.

2. After pouring the mixture into the molds, add the popsicle sticks and tap the molds against your counter to remove any air bubbles.

3. Place popsicle sticks into the molds and freeze for at least 6 hours.

4. When you want to pull the popsicles out, run warm water over the molds for about 10 seconds. That way, you can easily loosen and remove the pops. Enjoy!
